Chinese cabbage/Chinese Leaves

(Brassica Rapa var Pekinensis): A type of cabbage with white ribs and elongated leaves, rather like a coarse cos lettuce. Chinese leaves have little flavour, but a good crisp texture, making them ideal sliced into salads they are as good at taking on other flavours when added to a stir-fry or dressed with a little soy sauce.
