A cheesemaking family based in Five Ashes, near Heathfield in East Sussex; influenced by the experience gained making cheese in Australia, Canada, Holland, New Zealand and South Africa.
They specialise in a selection of cheeses based on Dutch traditional varieties, such as 'Sussex Dammer' and Boerekaas' (which is offered at various stages of ripeness and in a variety of flavours - such as 'garlic and chives' and 'cracked black pepper').
They also make 'Sussex Brie', 'Cape Camembert' and 'Five Ashes Cream Cheese'; plus 'Mayfield Swiss'.
They hope to have their milk supplied by one local Friesian/Holstein herd by the end of 2007.
