Producers of top-quality organic smoked salmon on Galway Bay, from fish reared on Clare Island, 6 miles out into the Atlantic Ocean.
Fish are fed on a diet of fish pellets made from Pelagic fish (herring and mackerel), ground-up crustacean shells and a little Phaffis yeast the last two giving the fish a soft pink colour. The fish have to contend with high tidal exchange rates which gives their flesh a natural firmness, often lacking in farmed fish; and they are stocked in cages at a rate of 2 fish per cubic metre about half that of conventional farms. Smoked wild salmon are sometimes available by request, but organic gravadlax, roast smoked salmon, smoked trot and mackerel are normal offerings.
