Kinvara Smoked Salmon

 Producers of top-quality organic smoked salmon on Galway Bay, from fish reared on Clare Island, 6 miles out into the Atlantic Ocean.

Fish are fed on a diet of fish pellets made from Pelagic fish (herring and mackerel), ground-up crustacean shells and a little Phaffis yeast – the last two giving the fish a soft pink colour. The fish have to contend with high tidal exchange rates – which gives their flesh a natural firmness, often lacking in farmed fish; and they are stocked in cages at a rate of 2 fish per cubic metre – about half that of conventional farms. Smoked wild salmon are sometimes available by request, but organic gravadlax, roast smoked salmon, smoked trot and mackerel are normal offerings.
