Mark Robertson produces an excellent range of cheeses using both Jersey cows' milk from Wheelbirks Farm, cows' milk from the Blagdon Estate from where he is based, goats milk from Cumbria and Sheeps milk from North Yorkshire.

They include 'Coquetdale' - a French-style cheese, matured in damp conditions, causing natural cellar mould on the surface which partially softens the cheese as it ripens. It has a rich and buttery flavour.
