A mill was mentioned on this site in The Domesday Book, and John Lister now mills over 20 sorts of stone-ground flour in his renovated mill on the banks of this tributary of the Avon (some of it organic).
These vary from French 'type 55' (for baguettes), Italian ciabatta flour and strong Canadian organic wholemeal to Shipton's Five cereals (wheat flakes, barley flakes, sunflower seeds, millet and oats), organic dark rye flour and sometimes chestnut flour. Each one is primarily packaged and set up for commercial-style baking of the highest order, so his flours generally come in 32 kilo sacks.
But they also offer a retail selection in 2.5 kilo bags, and these can be delivered by mail order - ask for 'Flour Direct' when phoning.
