Top-class supplier of both Single & Double Gloucester cheeses. These are made in the traditional manner and with raw (unpasteurised) milk from their own herd. Double Gloucester is made from full cream milk, while the Single variety uses skim-milk from the evening milk mixed with the morning's whole milk to produce a lower-fat cheese with a creamy flavour. If able to visit the Dairy, you can watch Diana Smart making these cheeses on Tuesdays and Thursdays. Once tasted you will release the inadequacy of the supermarkets versions of these cheeses.
