Suppliers of a rare commodity in Britain - honey that's both organic and unpasteurised - as British honey isn't allowed to be so labelled, as in our heavily-populated country, bees might gather pollen from non-organic sources.
This is produced by a family in the Pyrenees of Aragon, and offered in 1 kilo jars in eight varieties - Chestnut, Eucalyptus, Heather, Multifloral, Lavender, Oak, Rosemary and Thyme (each with its own definate character). The individual varieties are not finely filtered, which can also detract from the character of the end product.
The bees feed on their own honey during the winter months, unlike most commercial operations, where they are fed on sugar substitutes.
