Anne and Andy Wigmore make four excellent cheeses in a dairy next to their house, all from unpasteurised milk.
Spenwood, a pressed ewe's milk cheese; Wigmore, a soft moist cheese again made from ewe's milk; Wellington, a hard-pressed cow's milk cheese and Waterloo, in some ways a cow's milk mirror image of Wigmore.
All are first-class and available in 5lb (2.3kilo) truckles, with smaller sizes available at Christmas. Mail Order Service.
