Mervin Austin mills his own flour using French burr stones and Derbyshire peak stones at his excellent bakery.
The resultant bread (over 30 varieties) is baked in a wood-fired oven, which takes two weeks to reach its operating temperature. His Lincolnshire Plum loaf is a must buy.
