An excellent creamy blue cheese produced by the Stansfield family from their Freisian Holstein cows its in the style of Gorgonzola.
The cheese is produced by hand in a newly-built dairy at Knowle Farm, using the latest equipment.
The high Cornish rainfall and mild climate creates an excellent humidity ideal for cheese maturing. After 12 weeks of maturing, cheeses start to change taste and texture and matures in a different direction creating rich sweet blues to the more tangy variety.
They also make Cornish Brie and Camembert. Visitors to the farm are welcome, but phone to make arrangements first.
