This farm houses ‘The Sheep Dairy Centre of the South East’. He makes Carolina and Cecilia cheeses himself – made with unpasteurised milk; the former a hard cheese, the latter matured more quickly buried in hops. A pasteurised version of Cecilia, with a less rounded flavour, is also made and called Nepicar.
