Stilton cheese is protected by law in a similar way to the French appellation d'Origine Controlee system - so all must be made within a defined area. The Colston Bassett Dairy is a cooperative just using the milk from six nearby farms.
They were the last to give up using raw (unpasteurised) milk, but they still produce Stilton with the most character.
A whole (full-sized) cheese weighs in at over 7 kilos, but a 'mini' version is more manageable at 2.5 kilos.
Conveniently, because of the length of the maturing process, cheeses are at their very best around Christmas!
