Make sure you use root vegetables, now they're at their best. If you roast them cut into chunks, with whole cloves of garlic, and perhaps sprinkled with Herbes de Provence and plenty of olive oil - you will have a treat.
The game season is at its peak, so prices at their best. Although some upmarket supermarkets offer items such as pheasant, your local butcher/game dealer will always give you more taste options - as supermarket items will almost certainly have been hung for the minimum period of time, and so will also have the minimum of flavour!
