On the ham front three main types are offered -
Wiltshire: available smoked or unsmoked, the unsmoked is cooked with brown sugar adding a subtle richness to its flavour. Both are cured over a two week period.
York: dry-cured for three weeks in salt and saltpetre. The hams are then hung to mature for at least ten weeks. An organic version of this ham is also available.
Shropshire Black: this is cured like a York ham, then infused with molasses, herbs and juniper. It then matures for a further three months.Parma-style ham: as in Parma, this is air-dried, salt cured and matured for a minimum of ten months.
