An excellent smokery run by Allan Watson.
He has very definite ideas about his products, using brines with the minimum quantities of salt and sugar. Dark sugar and black rum are part of the preparation for some products; while the wood for smoking includes shavings from Grant's nearby whisky distillery.
All their products are excellent, and come vacuum-packed - in this form they can be kept in the fridge or freezer without any loss of flavour. Seasonal fresh game is also supplied - including wild venison.
