Angels on Horseback Recipe

Oysters wrapped in a piece of bacon and grilled. A very popular Victorian savoury.

If you enjoy cooking take a minute to look at ‘Simon Scrutton French Cookery Classes’ on Google – and learn how to make top class bistro-style dishes. Suitable for beginners upwards. Small classes.

See below. Not so much a recipe as a technique.

Simply wrap fresh oysters in very thin bacon (this can be made thinner by gently
beating in between two sheets of cling film); skewer with a wooden cocktail
stick, which you have previously soaked in cold water, then grill until the
bacon is ready.

Either serve as a canapé on the cocktail stick, or give several each on warm toast.
