Batter; Yeast and Beer - Recipe
This is the best batter we've found for the fish of 'Fish & Chips', but it must be made at least an hour ahead. It will then be usable for a further 2 to 3 hours.

30g/1 oz fresh Yeast (available from the baking departments of most supermarkets)
20 fl oz/600ml beer (or Guinness if preferred)
450g/1 lb Plain Flour
2 level teaspoons Salt
- Dissolve the yeast in a little of the beer.
- When they have been mixed to a paste gradually add the rest of the beer, stirring continuously.
- Sieve the flour and salt into a bowl and make a well in the centre.
- Pour in the beer mixture and whisk into the batter.
Leave covered at room temperature for at least an hour before using.
