Boiled Fruit Cake Recipe
A traditional Irish cake, that keeps very well.
- 450g/1 lb sultanas
- 225g/½ lb granulated sugar
- 1 teaspoon (5ml) mixed spice
- 225g/½ lb butter
- 150ml/¼ pint water
- Boil the above ingredients for 10 minutes, mixing well. Let it get cold, then add - 450g/1 lb sifted white flour; 2 medium eggs - well beaten
- Blend very well, then put into a greased and lined cake tin (about 20cm/8 ins in diameter) and bake in a slow oven - 130°C/250°F/Gas ½ - for about 2 hours; or until a skewer comes out clean
This cake keeps well.
