Gremolata Recipe

A form of flavoured seasoning, traditional in Northern Italy, and a necessary accompaniment to Osso Buco (when it should be sprinkled over the top of plates when serving). It is delicious mixed into green vegetables, with a little olive oil; or mixed with breadcrumbs to form a coating for chicken or fish. To retain its fresh taste, it should be made as close as possible to the meal.

Ingredients for four people

- Zest from 2 unwaxed lemons

- A big handful of parsley (flat-leafed if possible)

- 2 medium cloves of garlic, peeled


Chop the parsley and garlic and mix it together with the lemon zest
