Rouille; Cheats Recipe
Found more often than not in restaurants these days as an accompaniment for Mediterranean Fish Soup (q.v.). The recipe for true "Rouille" is given elsewhere, and is worth the extra effort if you have some Fish Soup to use as its base.

- 1 batch of "Aïoli"
- 1 tablespoon (15ml) Tomato Purée
- ½ level teaspoon (2ml) Cayenne Pepper
- a big pinch of powdered Saffron or some strands soaked in very little warm water
- Add all the ingredients to the Aioli and mix well.
Keep chilled until shortly before needed.
Harissa can be used to replace the tomato purée and cayenne.
