Tomato and Basil soup - chilled

This soup is delicious, but very easy to make. Don't give your secret away; and in no circumstances be tempted to use dried Basil, as the result will be disappointing.

For 4 generous helpings:
2 * 400g/14oz tins of Tomatoes (Italian always seem to have the best flavour)
4-6 leaves of fresh Basil - depending on size
1 big, or 2 small, cloves of Garlic - peeled and chopped
300ml/½ pint Plain Yoghurt
1 teaspoon (5ml) Caster Sugar
the juice of ½ a lemon, sieved
Salt and freshly-ground pepper, to taste
¼ of a Cucumber, very thinly sliced (optional)
a bowl of Croutons (optional)


1. Process all the ingredients together in a food processor.

2. Refrigerate until well chilled.

3. Test the seasoning.

4. Serve, decorated with the thin cucumber slices and hand round the croutons.
