Wholemeal Biscuits for Cheese

Ingredients for one batch:

500gr/1 lb ‘Wheatmeal’ or ‘Wholemeal Flour
4 dessertspoons (40ml) Caster Sugar
2 teaspoons (10ml) Baking Powder
1 teaspoon Salt
½ teaspoon (2ml) Curry Powder
50g/2oz Lard – at room temperature
75gr/3oz Butter – at room temperature
About 100ml/4 fl oz Milk
A little flour for rolling out.


1. Mix the dry ingredients together, then rub in the fats.
2. Add enough milk to bind the mixture – you may not need it all.
3. Leave it to rest in the fridge for about an hour – or overnight if you wish.
4. Roll out the dough on a floured board to about .5cm/¼ thickness, then cut it into rounds and prick them with a fork, and bake them for 10-15 minutes at 200ºC/400ºf/Gas 6.
