Caramel Sauce Recipe
A delicious dessert sauce, ideal with ice cream or apple pie. It can be made well ahead, and kept in the fridge.
Follow the instructions carefully, as you can easily burn yourself seriously if the instructions aren't carefully followed.
Ingredients for 6-8 people:
5 fl oz/
1.Mix the sugar and water in a small, heavy-based, saucepan.
2.Melt the sugar over a low heat, then increase the flame and boil until the mixture becomes golden brown. Do not burn, or your sauce will be bitter.
3.While the sugar is caramelising, bring the cream to the boil in a larger stainless steel pan, being careful, as it will suddenly try to boil over - set this aside on the draining board.
4.Add the caramel to the cream (never the other way around) over the sink, mixing constantly.
5.Transfer to a low heat and continue stirring untilyou have a smooth sauce.
The sauce will keep in the fridge until the date shown on your tub of cream.
