Caramel Sauce Recipe

A delicious dessert sauce, ideal with ice cream or apple pie. It can be made well ahead, and kept in the fridge.

Follow the instructions carefully, as you can easily burn yourself seriously if the instructions aren't carefully followed.

Ingredients

For 6 to 8 people:
9 fl oz / 260ml Cream
9 fl oz / 260ml Caster Sugar
¼ pint / 140ml Water
Method:
In a clean stainless steel or glass saucepan, mix the sugar and water, and put over a low heat to gently melt the sugar.
Bring to the boil, then reduce to a simmer, until the mixture becomes golden brown – don’t allow the sugar to burn.
Whilst this is happening, bring the cream to the boil in another clean pan – set aside.
Over the sink, add the caramel to the cream (never the other way around).
Whisk carefully and return the sauce to the heat until all the caramel has dissolved.
When cold, store in the fridge, the heat as needed.
