Beetroot; to cook from raw - Recipe

When choosing raw whole beetroot to cook at home, choose those of the same size, so they take the same amount of time to cook. Small or medium tubers are the best for flavour and texture.

1. Boiling. Wash the beetroot carefully, then put them in a saucepan and cover with plenty of water. Adding about 1 teaspoon (5ml) of salt for each 1lb/500gr of beetroot. Bring the water to the boil and cook, at a simmer, for about 2 hours, depending on size. Allow them to cool a little and peel them while they're still warm (as this is easier).

2. Baking: set the oven at Gas 1/140
