Spare Ribs with Cajun Seasoning

A very simple way of cooking pork spare ribs, but delicious none-the-less.


For 6 helpings:

1½ lbs/750gr Pork Spare Ribs
3 tablespoons (45ml) Plain Flour
Salt and freshly-ground Black Pepper
1 tablespoon Cajun Spice (available from delicatessen's and supermarkets – try the excellent version from
1 tablespoon (15ml) Vegetable Oil (not Olive Oil, as it's too strong)
2 Limes or Lemons – to serve; cut into wedges.


Pre-heat the oven to 200C/400F/Gas 6.
Mix the flour with the salt, pepper and Cajun spices.
Smear each spare rib with a little oil, the dust them with the seasoning mix - the oil should make it stick.
Transfer the ribs to a big roasting tray and roast them in the oven for 50 minutes, turning them over half-way through.

Serve with Lime or Lemon wedges.
