Fromage Blanc Recipe

500ml/1 pint Single Cream
The juice of half a Lemon
1 tablespoon Chopped Fresh Herbs - these mush be of the soft type, perhaps parsley, coriander, marjoram, mint or tarragon, not rosemaryor similar
1 small clove of Garlic, peeled and finely-chopped
Put the cream and lemon juice in a glass bowl. It will curdle. Leave it covered overnight in a warm place, such as an airing cupboard.
The following day, drain it through a very clean cloth (a J Cloth is ideal), then hang it for 2 days in a cool place.
Beat in the chopped herbs and garlic, and keep in the fridge.
