Carrots; Baked - Recipe
A delicious carrot recipe. Ideal for dinner parties, as it can be prepared well ahead.
For 4 helpings:
750gr/1½ lbs Old Carrots
½ teaspoon (2ml) Salt
½ teaspoon (2ml) Caster Sugar
90gr/3 oz Butter, melted
freshly-ground Black Pepper
120gr/4 oz Strong Cheddar, grated
30ml/1 oz Fresh Breadcrumbs
Equipment needed: a food processor makes it much easier to produce the fresh breadcrumbs
Peel the carrots and cut them into chunks.
Boil them in lightly-salted water, until they're tender.
Drain them and mash them into a purée, mix in the melted butter, sugar and pepper.
Stir the mixture over a low heat stirring until it's smooth, then transfer the mixture to a gratin dish.
Sprinkle it with the cheese and put the dish under a hot grill.
When the cheese start to bubble, sprinkle the breadcrumbs over evenly. Return to the grill until the breadcrumbs are golden brown.
