Fudge - chocolate and walnut
Easy to make as long as you reach the correct temperature.
If you prefer grainy, rather than creamy, fudge - beat the butter in for a little longer.

800gr/1lb 12oz Caster Sugar
150ml/6 fl oz/1 can of evaporated milk
120gr/4 oz Butter
12oz (2 cups) good-quality chocolate pieces
120gr/4 oz marshmallow pieces (these can be bought at a sweet shop)
1 teaspoon Vanilla essence
120gr/4 oz chopped (but not over-chopped) Walnuts
Equipment: a sugar thermometer
1. In a heavy saucepan, bring the evaporated milk, sugar and butter to the soft boil stage 236ºF. Remove from the heat.
2. Add the chocolate pieces, marshmallow crème, vanilla essence and chopped walnuts.
3. Mix for 8-10 minutes, then spread in a buttered 8in x 10in tray.
Chill until firm, then cut.
