Ice Cream; Rich Vanilla Recipe
Proper Ice Cream, easy to make, but possibly not healthy if eaten on a regular basis. A less-rich version is also listed.
Equipment needed: A plastic container (or similar), with a well fitting lid. It's important that all you items you use are carefully sterilised. This can be done by buying some baby's milk bottle sterilising solution (such as Milton), then follow the instructions.
8 Free-Range Eggs
180gr/6 oz Caster Sugar
1 litres/2 pints Double Cream
2 teaspoons (10ml) Vanilla Essence/Extract (not flavouring which is very inferior)
(a large measure of alcohol - say Vodka, will mean the ice cream won't set so solidly, without hiding the vanilla flavour)
1. Beat the eggs and sugar together until they're white and the sugar has dissolved.
2. Beat the cream in a separate bowl until if stiff enough to form peaks.
3. Combine the two together with the vanilla essence, pour the mixture into a plastic container with a well fitting lid.
4. Freeze until it's set, removing and beating it after 2 hours and three hours - so it doesn't set into an unmanageable block.
