Eves Pudding Recipe
A traditional English pudding comprising slices of apple arranged in an ovenproof dish, flavoured with sugar and lemon zest, over which is poured a sponge cake mixture.

For 4 generous helpings:
1 lb/450gr Cooking Apples, such as Bramley's - peeled and roughly chopped
3 oz/90mg Demerara or Unrefined Granulated Sugar
3 oz/90gr Butter, plus a little for greasing the basin - all at room temperature
grated zest of 1 Lemon, being careful not to include any white pith
3 oz/90gr Caster Sugar
1 medium Egg, lightly beaten
5 oz/150gr Self Raising Flour - sifted
a little Milk
Equipment needed: a ovenproof pudding basin able to hold 1
Lightly grease the pudding basin.
Mix together the chopped apples, sugar and lemon zest - put this in the buttered basin
Cream the butter and caster sugar together, until you have a smooth mixture.
Add the egg and mix it well in.
Add the sifted flourand blend this well in with a wooden spoon.
Add enough milk to give the sponge mixture a dropping consistency (so it falls off a wooden spoon slowly, but without help).
Pour this sponge mixture over the apples.
