Spotted Dick/ Spotted Dog Recipe

Equipment needed: a steamer, or a heavy roasting tin and a cake cooling rack; plenty of tin foil.

For 6 generous helpings:

250gr/ 8 oz Plain White Flour

2 tablespoons (60ml) Caster Sugar

1 teaspoon (5ml) Salt

2 teaspoons (10ml) Baking Powder


Sift the baking powder, flour, powdered cloves and salt into a large mixing bowl; add the sugar, the mix well together.

Mix in the dried fruit and the suet.

Add the water and mix until you have a pliable dough (of dropping consistency) - you might need a drop more water, this will depend on your flour.

Roll this mixture out, on a very-lightly floured worktop until you have a rectangle about 1cm/
