Sugar Syrup - Deluxe

An excellent version of sugar syrup, ideal for poaching fruit and for soaking Rum Babas.

Juice of 1 large Orange
Juice of 1 Lemon
500ml/1 pint Water
250gr/8 oz Caster Sugar
½ a Cinnamon Stick
1 Vanilla Pod – split, but the seeds left in


1. Put all the ingredients into a saucepan and bring to the boil.

2. Simmer for about 15 minutes.

3. Remove the mixture from the heat, and leave it to infuse until it's completely cold.

4. Pass through a sieve and discard the solids

Refrigerate until needed.
