Apricot Glaze Recipe

A useful glaze for finishing off Rum Babas (q.v.), or sealing an open fruit tart.

250gr/8 oz Good Apricot Jam (the higher the fruit content the better)

125ml/5 fl oz Water


1. Empty the jam into a saucepan with the water.

2. Heat gently until they are well combined.

3. Sieve, the cool to room temperature
