Hash Browns Recipe
A good way of using-up potato leftovers, or a brunch dish in its own right.
1. Grate cooked potatoes on the coarse side of a grater, and mix in one egg per 250g/½ lb of potatoes, plus a little salt and pepper. A little lightly-fried onion livens them up, if you have some.
2. Form into flat cakes, and then fry in hot oil (or oil and butter mixed) until they’re golden on both sides.
