If using for cooking, remove the course outer leaves, until you're left with a bulbous base and tender inner leaves. Chop these finely, discarding the root, and add them to your dish. The outer leaves can be used as a refreshing tisane or left whole to flavour a soup.

To make an Infusion / Tisane: Bruise lemongrass by rolling with a rolling pin, them infuse with boiling water for about 15 minutes. The result can be flavoured with sugar or honey, if you wish.

Lemongrass freezes well.
