Frangipane cream

For filling almond-flavoured tarts

This is easily made by mixing ground almonds sugar melted butter egg yolks flour almond essence plus cream


125g each of Ground Almonds
125g Sugar and sugar
60g melted butter
2 egg yolks
a level dessert spoonful (10ml) plain flour
a few drops of almond essence
2 tablespoons of whipping or double cream.


Mix the ground almonds with the sugar, melted butter, egg yolks, plain flour, almond essence; and 2 tablespoons of whipping or double cream.
Job done!
