Salt and Pepper, Roasted
This is an ideal accompaniment to cold meats and summer salads.
Coarse Sea Salt
1. Heat equal quantities of Coarse Sea Salt and Szechuan Pepper together in a heavy frying pan, until the salt starts to colour.
2. Transfer them to the oven at 180°/350°/Gas 4, and roast for 30 minutes.
3. Grind in a spice grinder before serving.
