Bake Blind - to
Pastry shells that have been baked without their filling, so that they don't become soggy if kept after cooking.

Made-up pastry - rolled out.
1. Line the chilled pastry shell with greaseproof/silicon paper, pressing it well into the corners.
2. Partially fill them with dried beans or rice.
3. Bake in a hot oven for 10 minutes – 200°C/400°/Gas 6 – or as directed in your recipe.
4. Remove the paper and beans/rice half-way through the baking time.
These can be kept for another occasion.
