Part of the expanding 'Ginger' group (including Gingerman at Norfolk Square and The Ginger Fox near Albourne, this business describes itself as a pub, offering traditional food with a modern twist.
Although this is accurate, the pub bit is insignificant (although there is a smart spacious bar), as food is the raisin d'etre. The description's also modest as the food front, as the standard of food on offer is of very high quality, even by gastro-pub standards. Ingredients from top-class, mainly local, suppliers form the backbone of the seasonal menu, and there are also local wines on the list.
Starters such as 'Colchester Oysters with Merlot & Shallot Vinegar'; 'Steak Tartare with Red Endive Salad and Sour Dough Toast' (which can also be had as a main course) and 'Penne with Courgette, Chili, Olive Oil and Sussex Parmesan' set the style for starters.
With maybe 'Bayton Farm Pork Sausages with Parsnip Mash and Onion Gravy'; 'Sautéed Calves Liver with Champ, Crispy Pancetta and Sherry Vinegar' and 'Grilled Tuna with Roasted Vegetables and Aioli' among the listed mains.
A short list of desserts might include 'Rhubarb and Mascarpone Soufflé'; 'Steamed Chocolate Fondant with Pistachio Ice Cream' and 'Bramley Apple and Pecan Nut Crumble'. While cheese lovers are offered a selection from Kent and Sussex.
Service is efficient, friendly and informal.
As booking aren't taken, you are strongly advised to arrive very early, or expect long enough waits to perhaps ruin your experience. Failing that, avoid the end of the week and weekends.
