Find this good restaurant, rather misleadingly monikered as a Champagne & Oyster Bar, in the city's narrow and atmospheric 'Lanes'.
You eat informally - comfortably-perched at a high marble-topped table, where you can watch the chefs at work preparing your meal - no bookings are taken, so avoid peak times unless you don't mind a wait.!
The complete emphasis is geared around seasonal seafood, with no meat dishes on offer - although vegetarians have a salad or two.
A lengthy list of starters/light meals can be ordered individually or mixed and matched as a tapas-like feast. These might include the likes of 'Fresh Sashimi'; 'Brighton Scallops with Black Pudding & Caper Butter'; 'Smoked Eel with Herbed Potato Cake & Tomat Chutney'; 'Squid Sautéed with Corizo & Chili'; and 'Smoked Salmon on Buckwheat Blini with Soured Cream & Chives' - while Oysters in various guises, perhaps washed down with a tankard of Black Velvet is another option.
If you're having a full meal, 'Squid & Shellfish Risotto'; 'Fish Pie'; 'Whole Wok-Fried Crab Singapore Style' and 'Lobster (either Thermidor or with Garlic Butter) might be there to tempt you - plus various Catch of the Day fish simply grilled.
One inspection produced an impressive looking main course Fish Soup, in a Bouillabaisse-style, and while this was enjoyed with it's red mullet, gurnard, mussel and razor clam ingredients - the soup based smacked too much of a proprietary tomato soup, rather than any possible hints of celery, fennel and leek. So stocks & saucing might be given an over-low priority.
To finish, the sweet toothed might be tempted by a nicely-present dessert - such as an 'Organic Chocolate Brownie'.
