Starters such as 'Pan-Seared Beetroot-Cured rganic Salmon with Beetroot Carpaccio & Wasabi Dressng'; 'Wild Mushroom Risotto, with Pecan & Rocket Salad, Roast Garlic & Truffle Emulsion' and 'Pressing of Ham Hock & Free-Range Chicken with Spiced Pineapple Pickle & Quail Egg Salad' typified an early summer menu.
